Ed's Special Company Chicken

Ed dreamed up this recipe one day and it sounded so good we had to try it. It now is one of our families favorites.

4 Boneless/skinless chicken breasts pounded to approx. 1/4 inch.
4 Jalapeno peppers with tops removed and cored.
4 oz cream cheese
1 tsp. parmesian cheese
1 tsp. BBQ'n Fools Burn Ya Twice Mon Jamaican Jerk Rub
1 bottle Rhino Peri Peri Sauce

Mix cream cheese, parmesian cheese and jerk rub together in small bowl. Stuff each jalapeno pepper with mixture. Roll up chicken breast around stuffed jalapeno pepper and secure with toothpick. Baste chicken with Peri Peri sauce and place in 350 degree oven until chicken is cooked thoroughly (40-50 minutes turning once and rebasting each side). Served with rice and vegetables this is one of our new favorites. The Peri Peri sauce is a milder African sauce the whole family will enjoy.
